Damascus San-Mai S-Ground Gyuto
This Chef’s knife is my stylized take on the Japanese gyuto, designed to prioritize comfort and superb function.
The Highly Polished and hard-wax coated 350 layer damascus-cladded San Mai blade sports a laser-thin S-Grind with the slightly convex edge, falling away into a large hollow-ground section just under 0.75” up from the edge. This grind means it will have excellent food-release and truly effortless cuts without sacrificing strength. The balance point is right at the heel transition, which allows the blade to be slightly forward weighted without feeling too heavy.
The handle features some truly unique elements, such as the radiused top of the African Blackwood bolster mirroring the reverse-radiused plunge grind of the blade. The bolster has concave finger-wells sculpted in to provide a perfect place for fingers to sit while in a mid-pinch grip. The rounded heel of the blade and the extra length of the handle also allow for a forward pinch grip or a full-handed grip on the handle. To add an extra flair of detail and individuality, I inlaid a double-keyhole “bowtie” to tie the bolster to the Turkish Walnut burl section of the handle. The lower lug of the bowtie is also providing an extremely strong housing for the domed stainless steel pin.
